Recipes: Tailgating Made Easy Ginger Chicken Meatballs
Serves 8
- 2 lbs ground chicken
- 2 eggs
- 1 tsp kosher salt
- 1 cup bread crumbs
- 1 cup finely chopped onion
- 2 tbs Hot Squeeze
- 2 tbs soy sauce
- 2 tbs grated ginger
Hot Squeeze to bake
Preheat oven to 400 degrees. In a bowl, mix all the ingredients together. Let sit for approx. 1 hour to let flavors meld. With slightly moistened hands, roll mixture into 1-inch balls. Transfer meatballs to baking sheet, either lightly greased or covered with parchment.
Bake meatballs for 15 minutes at 400 degrees. Lower oven temperature to 300 degrees, drizzle with Hot Squeeze until lightly coated and return to the oven for another 10 minutes.
Can be prepared ahead and reheated in crock pot, drizzled with more Hot Squeeze.
